Need an afternoon pick me up? These energizing crunch coffee bites will give you a boost and satisfy your sweet tooth at the same time.
Warning these are highly addicting, so I recommend storing most of them in the freezer then thawing in the fridge to avoid eating all of them in one day.
I am speaking from experience here with energy bites.
I used to pop a couple energy bites every time I opened the fridge and before I knew it, I ate the entire batch in a day or so.
Ingredients:
- 1/2 Cup Creamy Peanut Butter
- 2 TBS Honey
- 1/3 Cup of Cooled Coffee
- 1/4 Cup dark chocolate melted
- 1/2 Cup Rolled Oats
- 1 Rice Cake
Instructions
Mix the peanut butter, honey, and cooled coffee in a medium size bowl.
Then melt the dark chocolate in a a small microwave safe bowl at 30 second intervals until it is completely melted.
Pour the melted chocolate into the bowl with the peanut butter and mix well.
Then pour the rolled oats into the same bowl along with 1 crunched up rice cake.
Stir all ingredients until they are thoroughly mixed together then form 12 tablespoon sized balls.

Store the balls in the fridge up to a week in an air safe container and enjoy the balls as a quick snack or energy boost.
