This spicy jambalaya is packed with tons of spice and flavor that your guests will be going for a second helping. Jambalaya is perfect for a week night dinner, side dish, BBQ, or even a pot luck.

My husband brought this jambalaya to his work for a pot luck to share with his coworkers and he only came home with a few grains of leftover rice. It is safe to say that they thoroughly enjoyed the jambalaya.

Ingredients Needed

  • Cajun Sausage. Use either 1 pack of chicken sausage or pork sausage. My favorite is Aidells Cajun Style Andouille Smoked Pork Sausage.
  • Pulled Chicken. You use a cooked rotisserie chicken, cook a whole chicken yourself, or boil a couple of chicken breasts. The easiest option would be to purchase a cooked rotisserie chicken then pull it apart and set it aside on a plate or bowl.
  • Creole Seasoning. I use Tony Chachere’s Original Creole seasoning. I go heavy on this seasoning because it adds tons of flavor to the dish.
  • Garlic Powder. Season the dish with 1- 2 teaspoons.
  • Cajun Seasoning. This is optional, but it does add even more flavor. You might find that you don’t need it but make the dish a few times and make it your own.
  • Salt and Pepper. To season the chicken.
  • Rice. I typically use long white grain rice for this dish, but you can use a box of Zatarain’s Jambalaya rice as well.
  • Avocado Oil. To coat the pan or pot and prevent sticking.
  • White Onions. Adds flavor to the dish.
  • Red, Green, & Orange Bell Peppers. Adds flavor and color to the dish.

Creole Seasoning

Don’t swap out Creole seasoning for something else because this is the secret ingredient that adds such good flavor to the dish! If you’ve never cooked with Creole seasoning, you are going to wonder how your survived all this time. You can typically find this seasoning at any grocery store, if you can’t find it try looking near the seasoned salt section.
