2 Minute Sausage & Eggs

This is a great option for a quick lunch when you want something healthy with a lot of protein. You can make this lower carb by skipping the toast or add more nutrition with a side of fruit and sprinkle of hemp seeds over the eggs.

Ingredients
  

  • 2 Eggs
  • 1 Chopped Full Cooked Chicken Sausage
  • Salt & Pepper
  • Shredded Cheddar Cheese
  • 1-2 Ezekiel Toast
  • Optional: Side of Fruit & Sprinkle of Hemp Seeds

Instructions
 

  • Whip eggs with a fork in a small microwave safe glass bowl with fully cooked chicken sausage, cheddar cheese, and dash of salt & pepper.
  • Place in microwave for 30 seconds. Stir the eggs and return to microwave for 30 seconds.
  • Continue this 30 seconds then stir process for a total of 2 minutes or until the eggs are cooked through.
  • Remove eggs carefully from microwave and use a spoon to lift the eggs from the bowl.
  • Transfer the eggs onto toast and enjoy with a side of fruit and sprinkle of hemp seeds.
