Buffalo Ground Chicken Skillet
Easy to whip up for dinner or meal prep to make multiple Buffalo Chicken Parm Bowls for the week. Get creative with the items you have on hand! Use leftover shredded chicken or cut up chicken for this recipe.
- 1 lb Ground Chicken
- 1/4 Cup Chopped White Onions
- 1 TSP Garlic Powder
- 1 TSP Ranch Seasoning
- 1/3 Cup Plain Nonfat Greek Yogurt
- 1/3 Cup Yo Mama Buffalo Sauce
- 1/3 Cup Shredded Cheddar Cheese
- 1/4 Cup Blue Cheese Crumbles
Chop sweet potatoes and roast them with olive oil and salt + pepper for 30-40 mins at 425 degrees.
Brown ground chicken in a skillet, add all seasonings, and chopped onions.
Once the chicken is cooked through, add Greek yogurt and buffalo sauce.
Then add roasted sweet potatoes to the same skillet.
Top with cheddar cheese and blue cheese crumbles.
Place oven safe skillet into to the oven to melt the cheese for about 5 minutes.
